Delicious and easy keto-friendly peanut butter balls coated in chocolate, perfect for a low-carb treat.

Ingredients

Dough

  • 3/4 cup unsweetened peanut butter
  • 1/4 cup salted butter (softened)
  • 1/2 tsp vanilla extract
  • 1 1/2 cups Swerve Confectioners or other powdered sugar substitute
  • 3/4 cup keto-friendly chocolate melting wafers or chocolate chips
  • 3/4 tsp refined coconut oil

Instructions 

  • Mix peanut butter, butter, vanilla, and sweetener until combined.
  • Form into balls using 2 teaspoons each; chill until firm, about 2 hours.
  • Melt chocolate and coconut oil in microwave, stirring until smooth.
  • Dip chilled balls into melted chocolate, then place back on sheet.
  • Refrigerate until chocolate sets before serving.
