Delicious and easy keto-friendly breakfast bars perfect for on-the-go mornings.

Ingredients

Dry ingredients

  • 1 cup almond flour
  • 0.5 cup unsweetened shredded coconut
  • 0.25 cup erythritol (or preferred sweetener)
  • 0.5 tsp baking powder

Wet ingredients

  • 0.5 cup peanut butter or almond butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup sugar-free chocolate chips (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment.
  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients in another bowl.
  • Combine wet and dry, fold in chocolate chips if using, then pour into pan.
  • Bake for 20-25 minutes, cool, then cut into bars.
