A nourishing and light vegetable soup perfect for starting the year fresh and healthy.

Ingredients

Vegetables

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium zucchini, diced
  • 1 cup green beans, cut into 1-inch pieces
  • 4 cups vegetable broth
  • 1 cup kale or spinach, roughly chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika

Instructions 

  • Wash and chop all vegetables.
  • Heat olive oil in a large pot, sauté onions and garlic for 2–3 minutes.
  • Add carrots and celery, cook for 4–5 minutes.
  • Stir in bell pepper, zucchini, and green beans; cook for 2–3 minutes.
  • Pour in vegetable broth, bring to boil, then simmer for 15–20 minutes.
  • Add kale, thyme, paprika, salt, and pepper; simmer for 5 minutes. Serve warm.
