A vibrant and flavorful Italian Pasta Salad perfect for picnics and gatherings. Easy to prepare and customizable with fresh ingredients.

Ingredients

Pasta

  • 16 oz rotini pasta
  • 1 pint cherry (or grape) tomatoes (sliced)
  • 1 english cucumber (chopped)
  • 0.5 red red onion (thinly sliced)
  • 8 oz fresh mozzarella balls (mozzarella pearls or Bocconcini)
  • 4 oz salami (sliced)
  • 0.75 cup kalamata olives (sliced)
  • 0.75 cup pepperoncini
  • 0.5 cup fresh parsley and fresh basil (chopped)
  • Italian salad dressing

Instructions 

  • Cook the pasta in boiling salted water until al dente, then drain and cool.
  • Mix cooked pasta with chopped vegetables, mozzarella, salami, olives, pepperoncini, and herbs in a large bowl.
  • Drizzle with Italian dressing and toss to combine. Serve immediately or refrigerate to marinate.

Notes

For best flavor, marinate for a few hours or overnight. Reserve some dressing to toss right before serving.
