Ingredients

Chicken

  • 1 lb boneless, skinless chicken breasts (about 2 medium breasts, cut into bite-sized pieces)
  • 2 tablespoons olive oil (divided)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Peaches

  • 2 large ripe peaches (pitted and sliced into wedges)
  • 3 tablespoons hot honey (plus more for drizzling)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional, for extra heat)

Rice

  • 2 cups cooked white or brown rice (from about 3/4 cup uncooked)
  • to taste Fresh basil or mint leaves (for garnish (optional))
  • to taste Sesame seeds (for garnish (optional))

Instructions 

  • Season chicken with salt, pepper, and garlic powder.
  • Cook chicken in a skillet until golden and cooked through, then set aside.
  • In the same skillet, cook peaches until caramelized, then set aside.
  • Whisk hot honey, soy sauce, vinegar, and red pepper flakes; add to skillet and bubble for 1 minute.
  • Return chicken and peaches to skillet, toss in glaze, and heat through.
  • Divide rice into bowls, top with chicken and peaches, drizzle with extra honey, and garnish with herbs and sesame seeds.

Notes

For extra flavor, add a squeeze of lime or a sprinkle of chopped herbs.
