Ingredients

  • 1.1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 teaspoon salt
  • 2 cups shredded red cabbage
  • 1 medium carrot, julienned
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon honey

  • 2 tablespoons Dijon mustard
  • 1 tablespoon hot sauce
  • 1.5 tablespoons apple cider vinegar
  • 2 tablespoons olive oil

Instructions 

  • Preheat oven to 425°F (220°C). Toss sweet potatoes with olive oil, salt, and pepper; roast for 20-25 minutes.
  • Cook quinoa in boiling water with salt for 15 minutes; let stand covered, then fluff.
  • Season chicken with olive oil, paprika, garlic, onion, salt, and pepper; cook in skillet until golden and cooked through.
  • Mix cabbage, carrot, vinegar, olive oil, honey, salt, and pepper; let sit 10 minutes.
  • Whisk honey, Dijon mustard, hot sauce, vinegar, and olive oil for dressing.
  • Assemble bowls with quinoa, roasted sweet potatoes, chicken, and slaw; drizzle with dressing and serve.

Notes

Adjust seasoning and spice level to taste. For extra flavor, garnish with fresh herbs.
