A vibrant and flavorful dish combining tender chicken with fresh mango salsa, perfect for a quick and healthy meal.

Ingredients

Protein

  • 1.5 lb chicken breasts or thighs (boneless, skinless)

Sauce and flavoring

  • 3 tbsp honey (pure)
  • 2 tbsp lime juice (plus zest from 1 lime)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Fruits and vegetables

  • 1 piece ripe mango (diced)
  • 0.5 red bell pepper diced
  • 0.25 red onion finely chopped
  • 0.25 cup cilantro (fresh, chopped or parsley as substitute)
  • 1 jalapeño optional, finely minced for heat
  • 1 tbsp lime juice
  • 0.25 tsp salt

Instructions 

  • Marinate the chicken with honey, lime juice, garlic, olive oil, salt, and pepper for 10 minutes.
  • Cook the chicken in a skillet over medium heat until fully cooked, about 8-10 minutes.
  • While the chicken cooks, prepare the mango salsa by combining mango, bell pepper, onion, cilantro, jalapeño, lime juice, and salt.
  • Slice the cooked chicken and serve topped with fresh mango salsa.

Notes

For extra heat, add more jalapeño or a dash of hot sauce.
