Instructions
Preheat oven to 180°C (350°F). Line a 10x15-inch (25x38 cm) tray with parchment and lightly grease.
Whisk eggs and sugar on high until pale, thick, and fluffy (~5-7 min). Add vanilla gently.
Sift dry ingredients and fold into egg mixture carefully. Mix warm milk and oil, then fold in.
Pour batter into tray, tap to remove air, and bake for 10-12 min until golden and springy.
While hot, dust with powdered sugar, roll in towel, and cool completely. Whip cream with sugar and vanilla.
Unroll cake, spread cream, re-roll without towel, wrap, and refrigerate for 30 min before slicing.
Notes
Ensure the cake is fully cooled before unrolling to prevent cracking.
