cooked and chilled brown or white rice

Instructions
Heat half the oil in a large skillet. Cook shrimp 2–3 mins per side, then set aside.
Add remaining oil, sauté onion and garlic until fragrant.
Add peas and carrots, stir for 2 mins, then push to the side.
Add rice, soy sauce, and oyster sauce. Stir-fry until heated through and slightly crispy. Return shrimp, toss, season, and garnish before serving.
Notes
Use chilled rice for best results and adjust seasoning to taste.
