This flavorful shrimp fried rice is packed with protein and vibrant vegetables, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 1 lb shrimp, peeled and deveined

Oil

  • 1 tbsp sesame oil or olive oil

Carbohydrates

  • 3 cups cooked and chilled brown or white rice

Vegetables

  • 1 cup frozen peas and carrots
  • 1/2 cup diced onion

Aromatics

  • 2 cloves garlic, minced

Eggs

  • 2 whole eggs

Sauces & Seasonings

  • 3 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce (optional for depth)
  • to taste Salt & pepper

Garnishes

  • for garnish Green onions and sesame seeds

Instructions 

  • Heat half the oil in a large skillet. Cook shrimp 2–3 mins per side, then set aside.
  • Add remaining oil, sauté onion and garlic until fragrant.
  • Add peas and carrots, stir for 2 mins, then push to the side.
  • Add rice, soy sauce, and oyster sauce. Stir-fry until heated through and slightly crispy. Return shrimp, toss, season, and garnish before serving.

Notes

Use chilled rice for best results and adjust seasoning to taste.
