Enjoy these delicious and healthy frozen yogurt bars made with fresh strawberries and coconut yogurt, perfect for a refreshing treat.
Ingredients

frozen strawberries
(or fresh, chopped)

unsweetened yogurt
(coconut yogurt recommended)
1/4
cup
maple syrup
(or liquid sweetener)

vanilla extract
(optional)

tapioca starch

beet powder
(optional)

white chocolate
(optional topping)
Instructions
Chop strawberries and blend with yogurt, maple syrup, vanilla, tapioca starch, and beet powder until smooth.
Pour mixture into silicone molds, insert sticks, and freeze for at least 4 hours.
Melt white chocolate and dip frozen bars into it, then place on parchment to set.
Optional: decorate with sprinkles, nuts, or shredded coconut.
Store in a sealed bag in the freezer for up to two months.
Notes
Chopping strawberries makes blending easier, and freezing on a flat surface helps the bars freeze evenly.
