Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, chili powder, paprika, and salt; roast for 20-25 minutes.
Season chicken with paprika, garlic powder, salt, and pepper; cook in a skillet over medium heat for 6-7 minutes per side until cooked through. Brush with BBQ sauce in the last few minutes.
Whisk Greek yogurt, lime juice, BBQ sauce, and a pinch of salt to make the sauce.
Assemble bowls with rice or quinoa, roasted sweet potatoes, sliced BBQ chicken, corn, tomatoes, avocado, and red onion. Drizzle with yogurt sauce and garnish with cilantro.
