Ingredients

Meat and grains

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup long grain rice
  • 2 cups water
  • 1 can 15 ounce black beans
  • 1 cup corn kernels
  • 0.5 cup salsa
  • 0.5 cup shredded cheddar cheese
  • 1 whole avocado
  • 2 tablespoons chopped cilantro
  • 1 whole lime

Instructions 

  • Cook rice in water until tender, about 18 minutes, then fluff.
  • Sauté onion and garlic in olive oil until softened, about 3 minutes.
  • Cook ground beef until browned, then add spices and cook 1 minute.
  • Add beans and corn, cook until heated through, 2-3 minutes.
  • Assemble bowls with rice, beef mixture, salsa, cheese, avocado, cilantro, and lime wedges.
