Instructions
Soak skewers in water for 20 minutes or use a grill basket. Prepare onions by combining with lime juice and salt, let pickle.
Mix peach, avocado, cilantro, chili powder, and lime juice for salsa; season with salt.
Preheat grill to medium-high, spray with oil. Pat shrimp dry, season with tajin, salt, and cayenne, then thread onto skewers.
Grill shrimp 2-3 minutes per side until pink and firm; char tortillas about 1 minute per side.
Remove shrimp from skewers, assemble tacos with shrimp, salsa, pickled onions, and serve with lime wedges.
