Ingredients

Vegetables and Fruits

  • 1/2 medium red onion (thinly sliced)
  • 1 large ripe peach (pitted and diced)
  • 1/2 small avocado (pitted and diced (2 oz))
  • 2 tablespoons finely chopped fresh cilantro
  • 1 teaspoon tajin
  • 1/4 teaspoon chili powder (divided)
  • 1 1/2 pounds jumbo raw shrimp (shelled and deveined)
  • 8 inch corn tortillas

Instructions 

  • Soak skewers in water for 20 minutes or use a grill basket. Prepare onions by combining with lime juice and salt, let pickle.
  • Mix peach, avocado, cilantro, chili powder, and lime juice for salsa; season with salt.
  • Preheat grill to medium-high, spray with oil. Pat shrimp dry, season with tajin, salt, and cayenne, then thread onto skewers.
  • Grill shrimp 2-3 minutes per side until pink and firm; char tortillas about 1 minute per side.
  • Remove shrimp from skewers, assemble tacos with shrimp, salsa, pickled onions, and serve with lime wedges.

Notes

Ensure shrimp are evenly spaced on skewers for even cooking and avoid overfilling tacos for neat eating.
