A fresh and vibrant salad featuring grilled peaches, leafy greens, and a homemade basil vinaigrette, perfect for a quick and delicious meal.

Ingredients

Peaches

  • 2 pieces ripe but firm peaches
  • 1 tablespoon olive oil

Leafy greens

  • 8 ounces leafy greens
  • 1/4 cup thinly sliced red onion
  • 1 cup cherry tomatoes
  • 1 medium avocado
  • 4 ounces goat cheese
  • 1/3 cup roasted salted pistachios
  • 1/2 cup olive oil (for dressing)
  • 1/4 cup apple cider vinegar
  • 2 1/2 tablespoons raw honey
  • 1 1/2 tablespoons dijon mustard
  • 1 teaspoon kosher salt
  • 1/4 cup fresh chopped basil

Instructions 

  • Toss peaches with olive oil and grill for 2-3 minutes per side until soft and grill marks form.
  • Mix dressing ingredients in a jar or glass and shake or stir well; set aside.
  • Combine greens with half of the dressing, then top with red onion, cherry tomatoes, avocado, grilled peaches, goat cheese, and pistachios.
  • Drizzle remaining dressing over the salad and serve.

Notes

For extra flavor, let the grilled peaches cool slightly before assembling the salad.
