Instructions
Toss peaches with olive oil and grill for 2-3 minutes per side until soft and grill marks form.
Mix dressing ingredients in a jar or glass and shake or stir well; set aside.
Combine greens with half of the dressing, then top with red onion, cherry tomatoes, avocado, grilled peaches, goat cheese, and pistachios.
Drizzle remaining dressing over the salad and serve.
Notes
For extra flavor, let the grilled peaches cool slightly before assembling the salad.
