A classic comfort food, this grilled cheese combines crispy bread with melted cheeses for a delicious snack or meal.
Ingredients
Bread

slices
sourdough bread
1
tablespoon
Mayonnaise
1
teaspoon
Dijon mustard
1 to 2
ounces
grated sharp cheddar cheese
(depending on bread size)
1 to 2
ounces
grated Gruyère or raclette cheese
(depending on bread size)

Butter for the pan
Instructions
Spread mayonnaise on one side of each bread slice; flip one slice and spread Dijon mustard on the other side.
Layer cheeses on the mustard side, then top with the other bread slice, mayo side out.
Heat butter in a skillet over medium-low heat; cook the sandwich for 2-3 minutes until golden brown.
Flip the sandwich, cover, and cook for another 1-3 minutes until cheese melts and bread is golden.
Slice and serve hot.
Notes
Use a lid to help melt the cheese evenly and prevent burning.
