A fresh and vibrant peach salad with cucumber, shallots, mint, and a honey-lime dressing, perfect for a light summer meal or side.

Ingredients

Vegetables

  • 0.5 cup English cucumber, thinly sliced (about 1 cup)
  • 0.25 cup shallot, thinly sliced (about 1/4 cup)
  • 2-3 teaspoons olive oil
  • 1 tablespoon lime juice and zest (about 1 tablespoon juice, 1 teaspoon zest)
  • to taste salt and pepper
  • 2 cups peaches, pitted and sliced (about 2 cups)
  • 2 tablespoons mint leaves (about 2 packed tablespoons)
  • 2-3 teaspoons honey (to finish, optional hot honey)

Instructions 

  • Slice cucumbers and shallots thinly, then toss with lime juice, lime zest, olive oil, salt, and pepper. Let sit for 10 minutes.
  • Add peaches, mint leaves, and a drizzle of honey. Toss gently to combine.
  • Serve immediately with extra mint, honey, salt, and pepper on top.

Notes

This salad is best enjoyed right away; leftovers do not keep well.
