A fresh and vibrant peach salad with cucumber, shallots, mint, and a honey-lime dressing, perfect for a light summer meal or side.

Instructions
Slice cucumbers and shallots thinly, then toss with lime juice, lime zest, olive oil, salt, and pepper. Let sit for 10 minutes.
Add peaches, mint leaves, and a drizzle of honey. Toss gently to combine.
Serve immediately with extra mint, honey, salt, and pepper on top.
