  • 1.5 lbs baby potatoes
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh herbs (rosemary, thyme, oregano), chopped
  • to taste Salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Wash and halve the potatoes.
  • Toss potatoes with olive oil, garlic, herbs, salt, and pepper.
  • Spread on a baking sheet and roast for 30 minutes.

Notes

For extra flavor, sprinkle with Parmesan cheese before serving.
