This quick and delicious protein bowl combines seared steak, flavorful garlic butter, and fresh veggies for a satisfying meal.
Ingredients
Base
1lbsirloin, New York strip, or ribeye steak(about 1 to 1.25 lb, patted dry)
3tablespoonsbutter(divided)
1tablespoonolive oil or avocado oil
3–4clovesgarlic(minced)
Fresh herbs
to tasteparsley and/or chives
1lemonlemon(zest and wedges)
to tastesalt and black pepper
optionalcrushed red pepper flakes
Base
to tastecooked rice, quinoa, or cauliflower rice
Veggies
to tastebroccoli florets, cherry tomatoes, baby spinach, or bell peppers
Add-ons
to tasteavocado, pickled onions, feta or Parmesan(optional)
Instructions
Cook the base: prepare rice, quinoa, or cauliflower rice and keep warm.
Season steak with salt and pepper, then sear in a hot skillet 2-3 minutes per side. Rest the steak.
Sear veggies in the skillet until crisp-tender, then remove. Make garlic butter by melting butter, adding garlic and red pepper flakes, cooking briefly.
Return steak to the skillet, toss with garlic butter, lemon zest, and herbs. Slice or leave whole.
Assemble bowls with base, steak, veggies, and toppings. Finish with lemon juice, herbs, and extra garlic butter if desired.
Notes
For extra flavor, drizzle with the remaining garlic butter before serving.
