This quick and delicious protein bowl combines seared steak, flavorful garlic butter, and fresh veggies for a satisfying meal.

Ingredients

Base

  • 1 lb sirloin, New York strip, or ribeye steak (about 1 to 1.25 lb, patted dry)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil or avocado oil
  • 3–4 cloves garlic (minced)

Fresh herbs

  • to taste parsley and/or chives
  • 1 lemon lemon (zest and wedges)
  • to taste salt and black pepper
  • optional crushed red pepper flakes

Base

  • to taste cooked rice, quinoa, or cauliflower rice

Veggies

  • to taste broccoli florets, cherry tomatoes, baby spinach, or bell peppers

Add-ons

  • to taste avocado, pickled onions, feta or Parmesan (optional)

Instructions 

  • Cook the base: prepare rice, quinoa, or cauliflower rice and keep warm.
  • Season steak with salt and pepper, then sear in a hot skillet 2-3 minutes per side. Rest the steak.
  • Sear veggies in the skillet until crisp-tender, then remove. Make garlic butter by melting butter, adding garlic and red pepper flakes, cooking briefly.
  • Return steak to the skillet, toss with garlic butter, lemon zest, and herbs. Slice or leave whole.
  • Assemble bowls with base, steak, veggies, and toppings. Finish with lemon juice, herbs, and extra garlic butter if desired.

Notes

For extra flavor, drizzle with the remaining garlic butter before serving.
