A delicious Thai dessert combining sweet coconut-infused sticky rice with ripe mango slices, perfect for a quick treat.

Ingredients

Rice

  • 2 cups Thai glutinous rice
  • 1 can full-fat coconut milk (13.5 oz can)
  • 1/2 cup granulated sugar
  • 1/2 teaspoon sea salt
  • 2 ripe Ataulfo mangoes (sliced)
  • 1 tablespoon toasted sesame seeds

Instructions 

  • Rinse rice until water runs clear; soak for 4-6 hours.
  • Steam rice in a bamboo steamer for 20-25 minutes.
  • Simmer coconut milk, sugar, and salt until dissolved.
  • Fold half the sauce into hot rice; let rest for 20 minutes.
  • Slice mangoes and serve with rice; drizzle with remaining sauce and sprinkle sesame seeds.

Notes

For extra flavor, toast the sesame seeds before garnishing.
