A creamy and healthy egg salad made with Greek yogurt, perfect for a quick lunch or snack.

Ingredients

Eggs

  • 6-8 pieces hard boiled eggs (peeled)
  • cup plain Greek yogurt
  • 1-2 tablespoons finely chopped red onion
  • 2 teaspoons dijon mustard
  • ½ to 1 teaspoon kosher salt
  • black pepper black pepper (to taste)
  • ¼ teaspoon sweet paprika (and extra for garnish)

chopped chives (for garnish)

Instructions 

  • Chop the eggs and place in a bowl.
  • Add Greek yogurt, red onion, mustard, salt, pepper, paprika, and chives. Mix well.
  • Garnish with extra paprika and chives if desired.

Notes

Use fresh eggs for best flavor and texture.
