A creamy and healthy egg salad made with Greek yogurt, perfect for a quick lunch or snack.
Ingredients
Eggs

hard boiled eggs (peeled)

plain Greek yogurt

finely chopped red onion

dijon mustard

Instructions
Chop the eggs and place in a bowl.
Add Greek yogurt, red onion, mustard, salt, pepper, paprika, and chives. Mix well.
Garnish with extra paprika and chives if desired.
