Ingredients

Bread

  • 3 eggs eggs
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • 3 tbsp butter

Peaches

  • 3 fresh peaches peaches (sliced)
  • 2 tbsp honey
  • 0.25 cup brown sugar
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice

Additional

  • to taste powdered sugar powdered sugar (for dusting)
  • 0.5 cup Greek yogurt (dollops for serving)
  • 0.25 cup granola (sprinkles for topping)

Instructions 

  • Whisk eggs, milk, vanilla, cinnamon, and nutmeg; let rest for 2 minutes.
  • Heat 1.5 tbsp butter in skillet; dip bread slices for 2 seconds per side, then cook until golden, 3-4 minutes per side.
  • In same skillet, melt remaining butter; cook peaches with sugar, honey, lemon juice, and nutmeg for 5-7 minutes until syrup thickens.
  • Assemble by topping French toast with warm peach compote, dust with powdered sugar, and serve with Greek yogurt and granola.

Notes

Use fresh, ripe peaches for the best flavor and texture.
