Ingredients

Peach Filling

  • 5-6 medium fresh peaches, peeled and sliced (or frozen peaches)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch salt

Biscuit Dough

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, diced
  • 3/4 cup cold buttermilk

Instructions 

  • Preheat oven to 425°F (220°C).
  • Mix peaches with sugars, lemon juice, cornstarch, cinnamon, vanilla, and salt. Let sit for 10 minutes.
  • Transfer peach mixture to a skillet. Prepare biscuit dough by combining dry ingredients, cutting in butter, then adding buttermilk. Drop spoonfuls over peaches.
  • Bake for 20-25 minutes until biscuits are golden. Rest for 10 minutes before serving.
