Ingredients

Onion

  • 1 medium medium onion (Finely chopped)

Garlic

  • 3 cloves garlic (Minced)

Soy Sauce

  • 3 tablespoons soy sauce (For balancing savory flavor)

Eggs

  • 2 large large eggs (Lightly beaten; substitute with tofu for vegan)

Green Onions

  • 3 stalks green onions (Sliced thin)

Sesame Oil

  • 1 tablespoon sesame oil (For nutty aroma)

Vegetable Oil

  • 2 tablespoons vegetable oil (Neutral oil for frying)

Ginger

  • 1 tablespoon ginger (Minced or grated)

Chili Flakes

  • 1 teaspoon chili flakes (For added spiciness)

Tofu or Cooked Chicken

  • 1 cup tofu or cooked chicken (For extra protein)

Instructions 

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add chopped onion, garlic, and ginger; sauté until fragrant.
  • Stir in mixed vegetables and cook until tender.
  • Add cooked rice, soy sauce, chili flakes, and tofu or chicken; stir-fry until heated through.
  • Push rice to one side, scramble eggs on the other side, then mix everything together. Garnish with sliced green onions and drizzle with sesame oil before serving.
