Instructions
Heat oil and butter in a large pan, cook chicken until golden, then set aside.
Add onion and red pepper, cook until softened.
Stir in garlic, ginger, curry powder, stock, and lime leaves; simmer.
Add coconut milk, mango, and chicken; simmer until thickened.
Serve over rice, garnished with coriander.
Notes
Use fresh mango for best flavor and garnish with cilantro for added freshness.
