1lbGround chicken (or beef, turkey, or plant-based protein)
1packetTaco seasoning (store-bought or homemade)
Vegetables & Rice
3cupsCauliflower rice (fresh or frozen)
4cupsRomaine lettuce (chopped)
1largeAvocado (diced)
1cupCherry tomatoes (halved)
0.5cupRed onion (finely diced)
1cupMexican cheese blend (shredded)
0.25cupFresh cilantro (chopped)
0.5cupSugar-free salsa
0.25cupFull-fat sour cream
2tbspFresh lime juice
1wholeJalapeño (minced, adjust to taste)
Instructions
Cook ground chicken in a skillet over medium-high heat for 5-6 minutes, breaking apart until cooked.
Drain excess fat, stir in taco seasoning with 2-3 tbsp water, and cook for 2 minutes.
Remove from heat and let rest for 5 minutes.
If frozen, microwave cauliflower rice for 4-5 minutes; if fresh, sauté for 3-4 minutes.
Layer chopped romaine, cauliflower rice, seasoned protein, avocado, tomatoes, red onion, cheese, and cilantro in bowls. Top with sour cream, salsa, jalapeño, and lime juice before serving.
