A delicious and creamy vegan pasta dish featuring sautéed mushrooms and a rich cashew sauce, perfect for a quick and satisfying meal.
Ingredients
Pasta
12ozpasta (spaghetti, linguine, or fettuccine)
1tablespoonolive oil
1mediumonion, finely chopped(about 1 cup)
3clovesgarlic, minced
12ozmushrooms, sliced(cremini, shiitake, or a mix)
1/2teaspoonsalt(adjust to taste)
1/4teaspoonblack pepper
1/4teaspoonred pepper flakes (optional)
1tablespoonfresh thyme or dried thyme
1cupraw cashews, soaked or boiled(for sauce)
1.5cupsvegetable broth or water(for blending)
1/4cupnutritional yeast
2tablespoonslemon juice
1clovegarlic
1tablespoonolive oil or vegan butter
1/4cupfresh parsley, finely chopped
Vegan parmesan (optional)
Instructions
Cook the pasta in salted boiling water until al dente, then drain and set aside.
Sauté onion and garlic in olive oil until translucent, then add mushrooms, salt, pepper, red pepper flakes, and thyme. Cook until mushrooms are golden.
Blend soaked cashews, vegetable broth, nutritional yeast, lemon juice, garlic, salt, pepper, and olive oil until smooth, adding pasta water if needed.
Add cooked pasta to the mushroom mixture, pour sauce over, and toss to coat. Warm for 2–3 minutes.
Serve garnished with parsley, black pepper, and vegan parmesan if desired.
Notes
You can substitute different mushrooms or add extra herbs for variation.
