Ingredients

1poundshrimp (peeled and deveined)
1teaspoonOld Bay seasoning(See notes.)
Salt and pepper to tasteSalt and pepper
Vegetables and herbs
1cupchopped avocado(Sliced into 1 inch cubes.)
1/4cupchopped red onion
1/2tablespoonchopped jalapeño(Adjust to taste.)
1cupchopped cucumber
2tablespoonschopped, fresh cilantro
8cherry tomatoessliced in half
1/2-1fresh limejuice of(Adjust to taste.)
2teaspoonsfresh, chopped basil(Can use dried.)
Instructions
Season the shrimp with Old Bay, salt, and pepper.
Cook shrimp in 1 tablespoon olive oil for 2-3 minutes per side until bright pink. Remove and set aside.
Combine shrimp, avocado, tomatoes, basil, cucumber, onion, jalapeño, and cilantro in a large bowl. Add lime juice and remaining olive oil. Toss gently.
Season with salt and pepper to taste. Chill for an hour or serve immediately.
Notes
This salad is best enjoyed fresh but can be chilled for an hour to marinate the flavors.
