A creamy and comforting rice pudding made with coconut milk, perfect for a quick dessert or snack.

Ingredients

Rice

  • 0.5 cup white rice (preferably soaked in water for several hours)
  • 2 cups full-fat coconut milk (I like this brand)
  • 0.5 cup raisins (optional)
  • 1 tablespoon coconut oil (I like this brand)
  • 1 teaspoon ground cinnamon (this is a great buy)
  • 0.25 teaspoon cardamom
  • 0.5 teaspoon lemon juice
  • to taste none sugar or raw honey (I love this brand)

Instructions 

  • Combine all ingredients except honey in a large saucepan.
  • Bring to a gentle boil over medium-high heat.
  • Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
  • Stir in honey to taste if desired.

Notes

You can adjust sweetness with honey or sugar as preferred.
