Delicious and easy chicken and rice wraps perfect for a quick meal. Packed with flavorful spices and fresh ingredients, they make a satisfying lunch or dinner.

Ingredients

Protein

  • 1.5 pounds chicken tenders

Cooking Fat

  • 3 tablespoons olive oil (used in parts)

Grains

  • 3 cups wild rice (already cooked)

Vegetables

  • 1 cup corn kernels

Dairy

  • 1.5 cups shredded cheddar cheese

Wraps

  • 5 large flour tortillas flour tortillas

Seasonings & Condiments

  • 1 tablespoon olive oil
  • Juice from half a lemon lemon juice
  • 2 cloves garlic minced
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Juice from one and a half limes lime juice
  • 1 teaspoon sugar

Fresh herbs

  • A small handful fresh cilantro, chopped

Instructions 

  • Season chicken tenders with cumin, salt, pepper, and minced garlic.
  • Cook chicken in 1 tablespoon olive oil until browned and cooked through.
  • Mix cooked rice, corn, lime juice, lemon juice, sugar, and chopped cilantro in a bowl.
  • Slice cooked chicken and assemble wraps with rice mixture and shredded cheese in tortillas.
  • Roll up the tortillas and serve immediately.

Notes

For extra flavor, add a dollop of sour cream or salsa.
