A simple and delicious peach dessert baked in a cast iron skillet, combining creamy custard with sweet peaches for a comforting treat.

Ingredients

Dough and batter

  • cup all-purpose flour
  • ½ cup sugar
  • 1 teaspoon kosher salt
  • 4 large eggs
  • teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • 2 cups heavy whipping cream
  • 3 cups sliced peeled fresh peaches (½-inch-thick slices)
  • 2 tablespoons sugar

Spray and baking

  • 1 bottle baking spray with flour (for spraying the skillet)

Instructions 

  • Whisk flour, sugar, and salt; add eggs, vanilla, and almond extract, then whisk until smooth. Whisk in cream and rest for 10 minutes.
  • Preheat oven to 350°F (175°C). Spray a 10-inch skillet with baking spray.
  • Pour half of batter into skillet; bake for 10-15 minutes until almost set.
  • Mix peaches with 2 tablespoons sugar; arrange on top of partially baked batter.
  • Pour remaining batter over peaches and bake 40 minutes until golden and set. Cool for 20 minutes before serving.

Notes

Serve warm or at room temperature for best flavor.
