A vibrant and easy-to-make pasta salad combining fresh mozzarella, cherry tomatoes, basil, and a zesty lemon-olive oil dressing. Perfect for a quick, flavorful meal or side dish.

Ingredients

Dressing

  • 1/2 cup Extra Virgin Olive Oil (The backbone of our dressing)
  • 1/4 cup Fresh Lemon Juice (Adds a bright, zesty tang)
  • 1 clove Garlic (Minced)
  • 1 teaspoon Dried Oregano Leaves (For classic Italian flavor)
  • 1 teaspoon Fine Sea Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 8 ounces Fusilli Pasta
  • 1 cup Small Mozzarella Balls
  • 2 cups Cherry or Grape Tomatoes (Halved)
  • 1/2 cup Fresh Basil Leaves (Chopped)
  • 2 tablespoons Balsamic Glaze (Optional)

Instructions 

  • Cook the fusilli pasta according to package instructions, then drain and let cool.
  • In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the dressing.
  • Combine cooked pasta, mozzarella balls, cherry tomatoes, and basil in a large bowl.
  • Pour the dressing over the salad and toss gently to combine.
  • Drizzle with balsamic glaze if desired, then serve immediately or chill before serving.

Notes

For extra flavor, let the salad sit for 15 minutes before serving to allow the flavors to meld.
