Ingredients

  • 1 medium head cauliflower (cut into florets)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • water as needed water (to thin tahini sauce)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss cauliflower with olive oil, salt, pepper, and garlic powder.
  • Roast for 25-30 minutes until golden and crispy.
  • Whisk tahini, lemon juice, water, salt, and pepper until smooth.
  • Cool cauliflower slightly, then drizzle with tahini sauce before serving.

Notes

For a creamier sauce, add more water gradually.
