These no-bake energy balls combine the natural sweetness of dates with crunchy pistachios for a healthy, satisfying snack.

Ingredients

  • 1 cup fresh medjool dates (pitted)
  • 1 cup raw pistachio kernels (reserve half for coating)
  • 1 cup rolled oats
  • 1 teaspoon vanilla extract (pure)
  • 1 pinch fine sea salt
  • 1/2 cup blitzed pistachio powder (for coating)

Instructions 

  • In a food processor, blend dates, pistachio kernels (reserve half for coating), oats, vanilla, and salt until well combined.
  • Form the mixture into 12 small balls and roll each in the blitzed pistachio powder for coating.
  • Place the energy balls on a tray and refrigerate for 30 minutes to set.

Store in an airtight container in the fridge for up to a week.
