Instructions
In a food processor, blend dates, pistachio kernels (reserve half for coating), oats, vanilla, and salt until well combined.
Form the mixture into 12 small balls and roll each in the blitzed pistachio powder for coating.
Place the energy balls on a tray and refrigerate for 30 minutes to set.
