Ingredients

Meat

  • 3 pounds beef chuck roast, cut into large chunks

Chilies

  • 3 dried guajillo chilies dried guajillo chilies, stems and seeds removed
  • 2 dried ancho chilies dried ancho chilies, stems and seeds removed

Vegetables

  • 1 medium onion, quartered
  • 4 garlic cloves garlic cloves, peeled
  • 1 can (14.5 ounces) diced tomatoes

Broth & Vinegar

  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar

Spices & Seasonings

  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 bay leaves bay leaves
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper

Tortillas & Toppings

  • as needed Corn tortillas, for tacos
  • as needed Oil, for frying tortillas
  • as needed Fresh cilantro, chopped, for garnish
  • as needed Diced onion, for garnish
  • as needed Lime wedges, for serving, optional
