A rich and flavorful pasta dish featuring tender chicken, creamy sauce, and fresh basil pesto for a delightful meal.

Ingredients

Pasta

  • 16 oz penne pasta, cooked al dente

Dairy & Oils

  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil

Meat

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces

Seasonings & Broth

  • 2 teaspoons Italian seasoning
  • 1 teaspoon onion powder
  • 1/2 teaspoon coarse sea salt (or to taste)
  • 1/8 teaspoon pepper (or to taste)
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 cups heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 cup mozzarella cheese, shredded
  • 7 oz basil pesto

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and set aside.
  • Season chicken with Italian seasoning, onion powder, salt, and pepper. Sear in butter and olive oil until cooked through, then set aside.
  • In the same pan, sauté garlic, then add chicken broth and heavy cream. Simmer until sauce thickens, then melt in cheeses.
  • Stir in cooked pasta, chicken, and pesto until fully coated. Serve hot.

Notes

For extra flavor, garnish with fresh basil or additional Parmesan cheese.
