A deliciously creamy chicken dish with a sweet and tangy peach Dijon sauce, perfect for a quick dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Fruits

  • 1 cup ripe peaches, pureed (about 3 medium peaches)

Condiments & Spices

  • 2 tablespoons Dijon mustard
  • 2 tablespoons all-purpose flour
  • 1/2 cup fat-free half-and-half
  • 2 tablespoons unsalted butter (softened)
  • 2 cloves garlic (minced)
  • 1 teaspoon honey
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 small onion (finely chopped)
  • 2 tablespoons cooking oil
  • 1/2 teaspoon salt (optional)

Instructions 

  • Preheat a skillet with oil over medium-high heat.
  • Pat chicken dry, season with salt and pepper, then sear until golden (5-6 min per side). Remove and set aside.
  • Add butter, sauté garlic and onion until fragrant.
  • Stir in flour and mustard, whisk until smooth. Add peaches, broth, and half-and-half; simmer.
  • Stir in honey, return chicken, cover, and simmer 8-10 min until cooked through. Serve garnished.

Notes

Adjust sweetness with honey as desired.
