Ingredients

pasta (linguine or fettuccine)

unsalted butter

plain Greek yogurt

freshly grated Parmesan

lemon juice

reserved pasta water
(add as needed)

Instructions
Cook pasta in salted boiling water until al dente, reserve 1 cup pasta water, then drain.
Heat olive oil and butter in a skillet; cook garlic 1-2 minutes until fragrant.
Whisk Greek yogurt, Parmesan, lemon juice, and reserved pasta water into the skillet; heat gently until smooth.
Add drained pasta to the sauce; toss and cook 1-2 minutes, adding more pasta water if needed.
Season with salt and pepper, garnish with parsley and extra Parmesan, then serve.
Notes
Use freshly grated Parmesan for best flavor.
