A rich and creamy pasta dish infused with garlic and Parmesan, perfect for a quick and satisfying meal.

Ingredients

Pasta

  • 12 oz pasta (linguine or fettuccine)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 cup plain Greek yogurt
  • 1 cup freshly grated Parmesan
  • 1 tablespoon lemon juice
  • ½-1 cup reserved pasta water (add as needed)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chopped parsley

Instructions 

  • Cook pasta in salted boiling water until al dente, reserve 1 cup pasta water, then drain.
  • Heat olive oil and butter in a skillet; cook garlic 1-2 minutes until fragrant.
  • Whisk Greek yogurt, Parmesan, lemon juice, and reserved pasta water into the skillet; heat gently until smooth.
  • Add drained pasta to the sauce; toss and cook 1-2 minutes, adding more pasta water if needed.
  • Season with salt and pepper, garnish with parsley and extra Parmesan, then serve.

Notes

Use freshly grated Parmesan for best flavor.
