Instructions
Cook pasta in salted boiling water until al dente; reserve ½ cup pasta water, then drain.
If dairy-free, blend soaked cashews with water until smooth.
Sauté mushrooms in olive oil until browned, then set aside.
Cook onion and garlic in the same pan until translucent; add broth, lemon zest, and pepper, simmer briefly.
Stir in cashew cream or ricotta, heat through, then toss with cooked pasta, adding reserved water for sauce.
Notes
For extra flavor, garnish with fresh parsley or chives before serving.
