Cranberry Seasoned Rice (Rice Cooker)

A flavorful rice dish with cranberries and herbs, perfect as a side or main accompaniment.

Ingredients

Butter

  • 2 tablespoons butter

Diced Onion

  • 1/2 onion onion, diced

Dry Jasmine Rice

  • 1 cup dry jasmine rice

Bay Leaf

  • 1 bay leaf bay leaf

Chicken Broth

  • 1 1/2 cups chicken broth

Chopped Fresh Parsley

  • 1/4 cup fresh parsley, chopped

Dried Cranberries

  • 1/3 cup dried cranberries

Instructions 

  • Add butter to rice cooker and set to Cook. When melted, add onion and cook until nearly softened.
  • Add rice, stir, and cook until lightly browned.
  • Pour in broth, add bay leaf, cover, and cook until cycle completes.
  • When finished, turn off, remove bay leaf, fluff rice, and stir in parsley and cranberries.

Notes

Use fresh herbs for best flavor and adjust cranberries for sweetness.
