Ingredients

Eggs

  • 6 large eggs

Cottage Cheese

  • 2 cups cottage cheese

Vegetables

  • 1 cup chopped spinach
  • 0.5 cup diced bell pepper
  • 0.5 cup chopped onion

Spices and Seasonings

  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Shredded Cheese (Optional)

  • 1 cup shredded cheese (optional)

Garnishes (Optional)

  • Fresh herbs, sliced tomatoes or avocado (for garnish (optional))

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  • Whisk eggs and mix in cottage cheese until combined.
  • Add spinach, bell pepper, onion, garlic powder, onion powder, salt, and pepper; mix well.
  • Fold in shredded cheese if using; pour into dish and bake for 40-45 minutes.
  • Cool for 5 minutes, then slice and serve with garnishes if desired.

Notes

For a lower sodium version, reduce salt and use fresh herbs for added flavor.
