Instructions
Preheat oven to 350°F (175°C) and grease a 9x9-inch baking dish.
Whisk eggs and mix in cottage cheese until combined.
Add spinach, bell pepper, onion, garlic powder, onion powder, salt, and pepper; mix well.
Fold in shredded cheese if using; pour into dish and bake for 40-45 minutes.
Cool for 5 minutes, then slice and serve with garnishes if desired.
Notes
For a lower sodium version, reduce salt and use fresh herbs for added flavor.
