Ingredients

  • 1 cup Arborio Rice
  • 4 cups Coconut Milk (Full-fat)
  • 0.5 cup Sugar
  • 1 teaspoon Lime Zest
  • 0.25 cup Lime Juice (Freshly squeezed)
  • 0.25 teaspoon Salt

Instructions 

  • Combine rice, coconut milk, sugar, and salt in a saucepan and bring to a boil.
  • Reduce heat and simmer, stirring occasionally, until rice is tender and mixture thickens, about 25 minutes.
  • Remove from heat and stir in lime zest and lime juice.
  • Let cool slightly before serving or chill for later.

Notes

For extra flavor, garnish with additional lime zest or toasted coconut.
