Instructions
Combine rice, coconut milk, whole milk, sugar, cardamom pods, and salt in a heavy-bottom saucepan.
Bring to a gentle simmer over medium-low heat, stirring occasionally.
Simmer for 25-30 minutes until rice is tender and pudding thickens.
Remove from heat, stir in vanilla extract if using, and discard cardamom pods.
Let cool slightly, then serve warm or chilled, garnished with chopped nuts.
Notes
For extra flavor, toast the nuts before garnishing.
