A fragrant and creamy rice pudding infused with coconut and cardamom, perfect for a comforting dessert or snack.

Ingredients

Main Ingredients

  • 0.5 cup Basmati Rice (rinsed thoroughly)
  • 2 cups Coconut Milk (full-fat)
  • 1 cup Whole Milk
  • 0.25 cup Sugar
  • 4-5 pods Green Cardamom Pods (lightly crushed)
  • a pinch Salt
  • 1 teaspoon Vanilla Extract (optional)
  • 2 tablespoons Chopped Pistachios or Almonds (optional garnish)

Instructions 

  • Combine rice, coconut milk, whole milk, sugar, cardamom pods, and salt in a heavy-bottom saucepan.
  • Bring to a gentle simmer over medium-low heat, stirring occasionally.
  • Simmer for 25-30 minutes until rice is tender and pudding thickens.
  • Remove from heat, stir in vanilla extract if using, and discard cardamom pods.
  • Let cool slightly, then serve warm or chilled, garnished with chopped nuts.

Notes

For extra flavor, toast the nuts before garnishing.
