Ingredients

Dough

  • 1 cup butter salted
  • 1 cup caster sugar
  • 1 tbsp unflavoured vegetable oil (canola recommended)
  • 5 large eggs
  • 1.75 cups all purpose flour (cake flour okay too)
  • 3 tsp baking powder
  • 0.5 cup buttermilk
  • 1.5 tsp vanilla essence (extract)

Instructions 

  • Preheat oven to 150°C (302°F) with fan on, grease and line an 8-inch square cake tin.
  • Sift flour and baking powder together; set aside. Mix buttermilk and vanilla; set aside.
  • Cream butter, sugar, and oil until light and creamy, about 5 minutes.
  • Add eggs one at a time, mixing well after each addition. Mix in dry ingredients and buttermilk mixture alternately until just combined.
  • Pour batter into prepared tin and bake for 60 minutes, or until a toothpick comes out clean. Cool before serving.
