A moist and flavorful apple cake infused with cinnamon, perfect for a cozy treat or dessert.

Ingredients

Dry ingredients

  • 210 grams plain flour or all purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 150 grams caster sugar or granulated sugar
  • 1 large red apple, peeled and roughly chopped
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml vegetable oil or flavourless oil
  • 120 ml Greek yogurt

Cinnamon topping

  • 50 grams caster sugar or granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon melted butter

Icing sugar glaze

  • 30 grams icing sugar or powdered sugar, sifted
  • 1-2 tablespoons milk (adjust for desired consistency)

Instructions 

  • Preheat oven to 180°C (350°F). Grease an 8-inch round cake pan and line with parchment paper.
  • Mix dry ingredients and chopped apple in a large bowl. In a separate bowl, whisk eggs, vanilla, oil, and yogurt.
  • Combine wet and dry ingredients gently. Pour batter into prepared pan.
  • Mix cinnamon, sugar, and melted butter to make topping; sprinkle over batter. Bake for 30-35 minutes until a skewer comes out clean.
  • Cool cake completely. Mix icing sugar with milk to make glaze and drizzle over cooled cake.

Notes

For best results, use a fresh apple and ensure not to overmix the batter.
