Ingredients

Fruits and Vegetables

  • 2 pieces ripe peaches (pitted and diced into 1/2-inch cubes)
  • 1 pint cherry tomatoes (halved (2 cups))
  • 1.5 cups fresh chopped basil leaves
  • 8 ounces mozzarella pearls
  • 0.25 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • to taste salt and pepper
  • optional balsamic glaze for topping

Instructions
