Instructions
Chop the chocolate into small chunks and place in a bowl.
Heat the cream until it gently simmers, then pour over the chocolate. Let sit 1 min, then stir until smooth.
Refrigerate the ganache for at least 2 hours until firm. Scoop and roll into 20 balls.
Roll the truffles in crushed strawberries, wait 10 min, then coat again.
Store in an airtight container in the fridge for up to 2 weeks or freeze for longer.
