These gluten-free blondie bars are made with chickpeas and vegan chocolate chips, offering a delicious and healthy treat.
Ingredients
Cooking Spray

chickpeas, rinsed and drained

all natural peanut butter (or almond butter)

pure maple syrup or agave nectar
(or honey if not vegan)

vegan (or regular) chocolate chips plus 2 tablespoons

Instructions
Preheat oven to 350°F (175°C) and spray an 8×8 inch (20×20 cm) pan with nonstick spray.
Add all ingredients except chocolate chips to a food processor and blend until smooth.
Fold in 1/3 cup (60g) of chocolate chips into the batter.
Spread batter evenly in the pan, sprinkle remaining chocolate chips on top, then bake for 20-25 minutes.
Cool for 20 minutes, sprinkle with sea salt, then cut into 16 bars and serve.

Store in the fridge for up to 5 days for best freshness.
