These gluten-free blondie bars are made with chickpeas and vegan chocolate chips, offering a delicious and healthy treat.

Ingredients

Cooking Spray

  • 1 can chickpeas, rinsed and drained
  • 0.5 cup all natural peanut butter (or almond butter)
  • 0.33 cup pure maple syrup or agave nectar (or honey if not vegan)
  • 2 teaspoons vanilla
  • 0.5 tsp salt
  • 0.25 tsp baking powder
  • 0.25 tsp baking soda
  • 0.33 cup vegan (or regular) chocolate chips plus 2 tablespoons
  • 2 tablespoons coarse sea salt, for sprinkling

Instructions 

  • Preheat oven to 350°F (175°C) and spray an 8×8 inch (20×20 cm) pan with nonstick spray.
  • Add all ingredients except chocolate chips to a food processor and blend until smooth.
  • Fold in 1/3 cup (60g) of chocolate chips into the batter.
  • Spread batter evenly in the pan, sprinkle remaining chocolate chips on top, then bake for 20-25 minutes.
  • Cool for 20 minutes, sprinkle with sea salt, then cut into 16 bars and serve.

Store in the fridge for up to 5 days for best freshness.
