Instructions
Toss the chicken with salt and pepper. Brown the chicken in 1 tablespoon of olive oil, then set aside.
Saute rice in remaining oil until lightly browned. Add beans, tomatoes, spices, and broth; bring to a boil.
Nestle chicken on top, cover, and simmer until rice is tender and chicken is cooked, about 20-25 minutes.
Remove from heat, sprinkle cheese, cover until melted, then top with tomato and green onions before serving.
Notes
