A quick and flavorful one-pan meal combining tender chicken, beans, rice, and cheese for a satisfying dinner.

Chicken

boneless skinless chicken breasts
(cut into bite-size pieces)
Vegetables

chopped yellow onion
Seasoning

taco seasoning mix
(from 1.25-oz package)

Rosarita® Premium Whole Black Beans
(15 oz, drained and rinsed)

(10 oz, undrained)

Instructions
Heat oil in a large skillet over medium-high heat.
Add chicken and cook for 3 minutes, stirring occasionally.
Add onion and taco seasoning; cook for 2 minutes.
Stir in beans, tomatoes, and water; bring to a boil.
Stir in rice, cover, and simmer for 7-10 minutes until rice is tender.
Stir in half the cheese, then sprinkle remaining cheese and cilantro on top.
Notes
For extra flavor, add a squeeze of lime or a dollop of sour cream.
