A delicious and healthy layered parfait combining creamy chia pudding, fresh mango, and shredded coconut for a tropical treat.

Ingredients

For the Chia Pudding

  • 0.5 cup chia seeds
  • 2 cups unsweetened coconut milk ((or milk of choice))
  • 2 tablespoons honey or maple syrup
  • 0.5 teaspoon vanilla extract

For the Parfait Layers

  • 1 ripe mango mango (peeled and diced)
  • 0.25 cup shredded coconut (unsweetened)
  • Optional granola, fresh berries, or mint (for garnish)

Instructions 

  • Mix chia seeds, coconut milk, honey, and vanilla in a bowl. Let sit for 5 minutes, then stir again.
  • Refrigerate for 2–4 hours or overnight until thickened.
  • Dice the mango into small cubes.
  • Layer chia pudding, mango, and shredded coconut in cups. Repeat layers and top with mango and coconut.
  • Optional: Garnish with granola, berries, or mint. Serve chilled.

Notes

For extra flavor, add a drizzle of honey or a few mint leaves on top.
